Ube is a purple yam originating from Southeast Asia and particularly well known in Filipino cuisine. It is recognised for its intense purple colour and delicate, sweet flavour with subtle nutty notes. It should not be confused with purple sweet potato or taro – ube is a distinct type of yam.
Ube powder is an easy way to add its characteristic colour and flavour to a variety of desserts and drinks. It is ideal for preparing ube lattes, smoothies, ice cream, cakes, cookies, creams and other desserts.
FLAVOUR
Delicate, sweet and slightly nutty, with notes that can resemble vanilla.
CULINARY USE
Ube powder can be mixed into milk or plant-based drinks, smoothies and shakes, and can also be used to prepare cakes, cookies, creams, ice cream and other desserts. For some recipes, the powder can be rehydrated by adding liquid.
GREAT FOR: lattes, smoothies, ice cream, cakes, cookies, creams and other desserts.
PAIRS WELL WITH: coconut, vanilla, white chocolate, milk and fruit.
NOTE: Ube is naturally purple, so the powder gives food and drinks its characteristic purple colour.
