Muscovado sugar – unrefined brown raw sugar from Mauritius obtained according to traditional methods.
The taste is like honey with notes of licorice, and it leads to caramel with a bitter aroma of molasses. Muscovado is lumpy due to its high moisture content.
It is not only used to sweeten coffee, tea and chocolate, but also when making desserts such as tiramisu, sauces and caramel-based cakes.
